Chicken Noodle Soup

Chicken Noodle Soup

 2 cups Chopped Carrots
 2 cups Chopped Onions
 2 cups Chopped Celery
 1 cup Chopped Parsely
 2 cups Frozen Peas
 1 tbsp Oregano
 2 Bay Leafs
 2 14 oz Cans of Chicken Broth
 1 tbsp Salt
 1 tbsp Pepper
 2 cups Pasta, Egg Noodle or Pasta of Your Choice
 8 Chicken Quarters

1st add 2 tbs of salt to 8 full cups of water.

Next, add your chicken I used chicken quarters that I cut in half. Then add 2 tbs of black pepper and let boil for 10 to 15mins.

Next remove all chicken and save about 3 cups of the chicken stock and set aside to use later.

Next set both the chicken and chicken stock aside and let cool. We will come back for it later.

Next, we are going to heat up the pan to saute the veggies.

Add about 2-3 tbs to the pan.

Next, add chopped onions to the pan and saute until transparent.

Next, add chopped celery to the pan and saute until soft.

Next, add chopped carrots to pan and saute until soft.

Next add top and cover pan let saute until all vegetables are soft once soften set aside in a bowl.

Next, add the chicken stock that was set aside.

Next, add both cans of chicken broth along with 2 cups of water.

Next, add veggies to the chicken stock mix.

Next, add 2to 3 bay leafs and 1tbs of oregano.

Next, add 1 cup of chopped parsley. Let simmer on low for about 10-15 mins.

While the vegetables are simmering in the broth it's time to start shredding the chicken.

Using your hands, knife or fork to shred all of your chicken into medium size pieces. Make sure to remove the skin and don't miss any bones and make certain you don't miss and nasty gristle from the bone.

Place your chicken into a bowl make sure you inspect it one last time to make sure all skin and fat and bones are removed.

Next, we are going to add our frozen peas. Mix well.

Next, add pasta in the small pasta noodles. You can use egg noodles if you wish.

Add chicken, When adding chicken make sure to stir all the way down to the bottom of your pot mixing in all of that yummy goodness. Let simmer of 10 mins.
